Eggs for Energy … Dinner on a Budget

When the budget was tight, and my parents wanted a good protein source for dinner, the choice was always eggs. Scrambled, poached, in omelettes and frittatas, paired with toast it became supper.

Ham, mushroom, and onion frittata takes only minutes to prep and cook. Awesome!
